My Little Experiment With Apple Cider Vinegar

Have you ever heard that a splash of apple cider vinegar (ACV) before meals can help keep blood sugar in check? I decided to test it out for myself this week.

Here’s what I did: I added 1 tablespoon of apple cider vinegar to a glass of water and drank it before a high-carb meal. Normally, that kind of meal would send my blood sugar soaring over 200. This time, though, my glucose stayed around 185 mg/dL.

Now, 185 is still higher than I’d like (you want your post-prandial glucose to be between 140-180 as a Diabetic)—but here’s the key: it could have been much worse. That little tablespoon acted like a buffer, helping my body process the carbs a bit more smoothly.

Why does ACV help?

  • It can improve insulin sensitivity, so your body uses insulin more effectively.
  • It may slow down the absorption of carbs from your meal.
  • It can also help you feel a little fuller, so you don’t overdo it on portions.

👉 Important note: ACV isn’t a magic fix, but it’s a simple tool you can keep in your back pocket.

In one study, participants not only had a lower blood sugar, but they also lost a few inches and improved lipids. Here is the study if you want to nerd out. How to Make It Taste Better Plain vinegar water can be…well, not the most enjoyable. Here are a few variations to try:

  • Citrus Twist: 1 tbsp ACV + ½ fresh lemon squeezed into cold water.
  • Berry Splash: 1 tbsp ACV + a few muddled raspberries or strawberries.
  • Cinnamon Comfort: 1 tbsp ACV + a dash of cinnamon + a drop of stevia in warm water (like a cozy tea).
  • Sparkling Option: Add your tablespoon of ACV to sparkling water with a slice of orange for a refreshing mocktail.

Start with once a day before your largest meal, and always dilute—it’s strong on the teeth and stomach if taken straight.
